Then you reach for a bottle of dressing... and douse it with vegetable oils, corn syrup, sugar, gum, and artificial thickening agents!
When I discovered all the junk that's in salad dressings, I was shocked! How often had I "ruined" what I thought was a super healthy meal? I started looking for better alternatives and found that most truly healthy dressings are insanely expensive. I realized that having a few simple dressing recipes on hand was the way to go.
This homemade avocado dressing is a family favorite. It was inspired by Salata, a salad my Lebanese mother-in-law often makes. Using its fresh, tangy flavor profile, I developed this all-purpose avocado dressing. Not only is it delicious on a salad, it works great in wraps, as a dipping sauce, or even drizzled over a delicious steak. And the best part it, it's made only with healthy, whole-food ingredients!
Homemade Creamy Avocado Dressing
Ingredients:
1 ripe avocado
1-2Tbsp lemon juice
1c extra virgin olive oil
1c water
6 garlic cloves
1-2tsp salt
1-2 Tbsp dijon mustard (optional)
Directions:
Add all ingredients to the blender and blend until smooth.
Adjust seasonings and salt to taste.
Enjoy!
Recipe Notes:
This dressing can be stored in the fridge for 2-3 weeks.
Play around with the amount of water. If you'd like a thicker dressing or sauce, use less!
You can try adding herbs or poppy seeds for different variations!
